
So I am halfway through my busy day that I was dreading. My meeting at 10am was pretty short, my interview went pretty well (I was really nervous and shaky to begin with but I gained confidence), my lab was cut short, I had time to take a shower, I have an hour til work, and I just made Banana Ice Cream.
That's right... delicious banana ice cream. With only 1 ingredient... bananas.
I'm not a huge fan of bananas. I remember I used to only be able to eat bananas covered in chocolate or whipped cream, or cut up over ice cream or yogurt. I was never the type of person who could eat a banana just by itself. But Pinterest came through once again... and led me to this post:

I used a food processor instead of a blender as she suggested, and boy I wasn't disappointed. It has the exact consistency of ice cream! And even though I've had an aversion to plain bananas in the past, I loved the taste! I started dreaming of variations, with maybe strawberries added or that magic shell chocolate! I plan to always have a small batch in the freezer from now on for those times when I'm craving dessert.
Breakfast
- Cajun Swai, White Rice, and Steamed (& lightly sauteed) Zucchini, Mushroom, Onion, & Spinach
- I ended up eating half for breakfast, and half a little later.

"What Went Well" Exercise
1. I was well-prepared for my interview, and did my best. I think I have a shot of going on to the next step.
- Why did this happen? I spent the little bit of free time I had yesterday to research different responses to interview questions, and also compiled a list of my 'weaknesses' and questions to ask the interviewer at the end. I prepared as much as I could, and did my best to answer the questions well.
2. Corporate did NOT come in to work, as was expected, so it was a normal and chill work day. Also, they finally made the rule that it has to be 2 people closing at all times (before we closed alone - sketchy).
- Why did this happen? Something scary had happened to me while closing a few weeks ago, so I contacted corporate, and they officially enacted the new rule last night.
3. I got grocery shopping done, and tried a new beer called Wild Blue. It was DELICIOUS, and a beautiful purple in color.

- Why did this happen? I took advantage of my time, and when I saw this beer, I thought to myself "Wth, why not? Its the small things in life."
